Peanut Butter Pie
This is one of Carol's most asked-for recipes, is remarkably easy to prepare, and
always a big hit. Its origin is Betty Ebert, Air Force wife of one of Rick's friends of
yore (1987). It should be prepared several hours (or a day) in advance.

Serves 6 for dessert
4 oz cream cheese
½ c creamy peanut butter
½ c milk
1 c 10x confectioners sugar
1 8oz carton "Cool Whip" (or 6 oz whipped cream)
1 9" graham cracker crust (homemade or store-bought)
Blend together first four ingredients until smooth.
Fold in about 6 oz of Cool Whip.
Pour into pie crust and freeze.
May be served frozen or thawed.
