Garlic Mashed Potatoes

I saw this on a Cook's Country broadcast.

The usual garlic mashed potatoes recipe requires roasted garlic. If you have time, roast the garlic. Otherwise, use the shortcut here. It works.

Garlic Mashed Potatoes

*6 to 8 servings*

4 lb russet potatoes, peeled and cut into " pieces
12 T (1 sticks) unsalted butter
12 cloves garlic, minced
1 t sugar
c water
1 c half-and-half
1 t salt

Rince the potato pieces under running water to remove surface starch. Heat 4 T butter in dutch oven over medium heat.
Add minced garlic and sugar.
Cook over medium-low heat until garlic is straw colored, 3-4 minutes. Add c water, 1 c half-and-half, and salt.
Add potatoes and toss. Turn heat to low and simmer, covered, for 25-30 minutes, stirring occasionally.
Mash off heat, add in remaining 8 T butter.
Fold in remaining c half-and-half and serve.
