Faux Mashed Potatoes

If you love mashed potatoes, but don't want all the carbs from the potato starch, this dish is just as good. You also get the added nutritional benefit of the cancer-fighting beta-carotene (Vitamin A) and fiber.

If you're looking for the vegan recipe for mock mashed potatoes, this isn't it. The vegan version contains millet and no butter or cream. This one skips the millet and adds mushrooms, onions, butter and cream.

Cauliflower and Mushroom Puree

*Serves 4*

3 c chopped cauliflower

3 T olive oil

4 T butter

1 onion, finely chopped

3 c sliced mushrooms

4 T creme fraiche or heavy cream

salt and pepper to taste

Bring 4 q of salted water to a boil in a large saucepan. Add cauliflower and

cook for 6 minutes. Drain and set aside.

Meanwhile, heat the oil and butter in a large skillet over medium-high heat

until the foam subsides. Add the onion to the skillet and saute for 5

minutes. Add the mushrooms and saute, stirring occassionally, for 5 minutes.

Transfer the cauliflower and the mushroom mixture to a food processor. Add

the creme fraiche (or heavy cream), salt, and pepper, and puree for 1

minute, or until smooth. Cook the puree in a saucepan over low heat,

stirring occasionally, for 3 minutes, or until it is heated through.

Serve immediately.
